Verjuice

Verjuice is the sour juice of unripe grapes. It is a common ingredient in medieval cooking, often being used in ways that modern cooks might use vinegar.

It is now available from some gourmet shops and online retailers, and even supermarkets (e.g. Coles in Australia).
