In cooking powder douce (sweet powder) is a combination of spices used by cooks for a dish requiring a sweet spice flavour. Individual cooks probably would each have had their own recipe for powder douce, although it almost always would contain a large amount of cinnamon. For dishes requiring a stronger spice taste, a powder fort was used.
