Sole

The sole of a shoe is the section that protects the sole of the foot against the ground. Typically made from the leather of cattle and stitched to the upper using a tunnel stitch (up until the mid 12th century) or an edge/flesh stitch or atatched to a rand using an grain/flesh stitch.

They could also have a second sole fitted called a clump sole and/or be protected with pattens.
