Modern Recipe
- The longer quince cooks, the redder it gets.
Ingredients
- 3 pounds quinces, washed, quartered and cored.
- 1 whole orange
- 4 lbs sugar
- 1/2 cup orange juice
- 1/2 cup lemon or lime juice
- 2 cups water
Method
- Grind together the prepared quinces and the orange.
- Add the other ingredients.
- Cook slowly until the syrup jells.
- Seal in sterilized jelly glasses.
