There is (or are) somewhere recipes specifically for trencher bread, which produces a dark loaf of slightly-cardboardy bread, which absorbs meat-juices wonderfully, and can be sliced at the end of the meal and eaten as a finale (or kept for nibbling at during the post feast entertainment.
