Leek Sopes

Serves 6.

  1. Top, tail and wash the leeks. The recipe calls for the leeks to be 'slit'. This can be interpreted in two ways- one, slit the leeks lengthwise and cook 'whole'. In my trial, I sliced the leek (depends on what type of presentation you want).
  2. Saute the leeks in olive oil until they soften (don't brown them) and sprinkle with salt/pepper.
  3. Add the wine and simmer for about 10 - 15 minutes.
  4. Quarter your toast and serve the leeks over the toast.

Gwir verch Madog.
