Quince marmalade (recipe)

Modern Recipe

  • The longer quince cooks, the redder it gets.

Ingredients

  • 3 pounds quinces, washed, quartered and cored.
  • 1 whole orange
  • 4 lbs sugar
  • 1/2 cup orange juice
  • 1/2 cup lemon or lime juice
  • 2 cups water

Method

  1. Grind together the prepared quinces and the orange.
  2. Add the other ingredients.
  3. Cook slowly until the syrup jells.
  4. Seal in sterilized jelly glasses.
