  • 3 pounds quinces, washed, quartered and cored.
  • 1 whole orange
  • 4 lbs sugar
  • 1/2 cup orange juice
  • 1/2 cup lemon or lime juice
  • 2 cups water
  1. Grind together the prepared quinces and the orange.
  2. Add the other ingredients.
  3. Cook slowly until the syrup jells.
  4. Seal in sterilized jelly glasses.

The longer quince cooks, the redder it gets.
