Alcoholic infusions are the legal way to make many spirits. Infusion tends to involve cramming a jar full of herbs, fruit, coffee etc and filling it with a pre-made alcoholic beverage. It is important to sanitise all your equipment before use as a badly made batch can cause blindness.
