"zest" in the recipe is actually a typo, it should be with a "yogh" which does look a little like a "z" but isn't pronounced like one. That makes the word transcribed as "zest" actually more like "yest" and, in fact, it means "yeast." The result is that the modern recipe lacks yeast. AlexandreDavigne 23:56, 26 March 2009 (EST)
