Pasley is a biennial plant (it dies down after 2 years) that grows well (read fast and furiously) from seed (if the slugs don't eat all your seed). Modern pasley comes in 2 main varieties - the ornamental curley pasley, and the much more flavoursome (and probably more period) italian pasley.
It makes a good flavouring for herb butters etc.
