A recipe is a set of instructions designed to instuct the reader on how to make something, particularly food. While modern recipes are quite precise in their instructions, recipes from period tend to be more ambiguous, and are sometimes little more than aides memoires for the cook. For this reason period recipes often require not only translation into modern English, but also redaction into a more modern style and interpretation to fill in missing information.

Period style cooking is a big part of many SCA events (feasts being one obvious example :)

Many period dishes are simple to prepare and only require ingredients that can be found in any supermarket. Remember that many foods we eat today didn't exist during period and their presence is noticable (to some people at any rate)

There are many ways to participate in recreating medieval cooking. You can join your local cooks guild, cook for a few SCA friends following a medieval recipe, or cook period food over an open fire at a camping event. When using period recipes, you might have to make a lot of interpretative assumptions about what the recipe meant; in the SCA, revising a recipe to include these assumptions in a modern format is sometimes called "redacting", though outside of this context that word has a different meaning.

Books
Several good books have been written with period and period-style (cf. Period vs. Period-Style) cooking. Among these are:

; Take a Thousand Eggs or More : An excellent source in two volumes. The first contains originals, redactions & recipes; the second contains originals with redactions, but no modern recipes.
; A Proper Newe Booke of Cokerye : Originals & redactions from a 16th century cookbook.
; Pleyn Delit : An excellent collection of original and interpreted period recipes. Highly recommended.

There is also the website Gode Cookery, which contains many period, period-style and periodoid recipes.
Although The English Dancing-Master makes no specific description of the figure, from the choreography it can be established that it is always performed by two people together, and that its duration is that of two doubles. It is typically interpreted as being a turn, usually once around, by two dancers with linked arms.

"Right arms" or "arms by the right" is done by linking right arms, usually forearm to forearm or at the elbow, and going around with forward steps. "Left arms" or "arms by the left" is the same, but taking left arms and naturally rotating the other way around.

By analogy with Sides, when Arms is done twice it is often assumed to be done by the right first and the left the second time.

198.77.46.84: changes in terminology

English Country Dance is the common name for dances propagated by John Playford and later his sons and other heirs in the book titled The English Dancing Master (later renamed to The Dancing Master). This style of dancing evolved in England, and eventually spread to France and Germany and later to the New World, and even Australia. Bush dances such as Strip the Willow are included in later editions of The English Dancing Master.

It was published in 1651 and is theoretically outside of the SCA period but is commonly done in the SCA anyway. English Country Dance can be classified as early Baroque Dance rather than Renaissance Dance, although it is not clear that the dances in The English Dancing-Master are more closely allied to most Baroque dances than to Renaissance dances. There are references to dances with some of the same names as those in Playford before 1600, although from the description of a couple of these it is clear that the dance was significantly different from those later printed by Playford.

Many of these dances are somewhat similar in form, often being for formations of two, three, or four couples, often consisting of what modern teachers often call a verse-and-chorus structure. The three "verse" sections are typically leading forward and back or circling two doubles around in the first verse, sides in the second, and arms in the third. However, this is at best a general guideline.

There is also the Morris dance, (originally Moorish) brought back during the Crusading period, danced by small groups of men, bearing bells, sticks, handerchiefs and the like, and frequently alleged to have been linked to certain English pagan traditions. See (mundanely) the works (passim) of Terry Pratchett, and accounts of the Helston Furry Dance, and the Padstow May Dance.
It is done by two dancers facing (by default this is assumed to mean partners, if no other pairing is specified). They go forward in four counts, on a diagonal slightly to the left, to meet with right side by right side ("sides by the right"), then fall back to their starting places in four counts. The second time, they go forward to the opposite side to meet with left side by left side ("sides by the left").

The reconstructed dances are somewhat similar in form, usually being for sets of two, three, or four couples, often consisting of what modern teachers often call a verse-and-chorus structure. The three "verse" sections are typically leading forward and back or circling two doubles around in the first verse, siding in the second, and arming in the third.

The Maltese Branle is a circle branle, supposedly invented by the Knights of Malta to burlesque the Turks.

Most famous for the repeated bit where people dance into the middle making various gestures, before executing three gonad-high kicks and turning out again. This can be hysterical when performed by men in full leg-armour.

The name of this branle is often applied erroneously to the Turkish Branle, which was choreographed in the SCA to the tune of Schiarazula Marazula. This tune often accelerates as it goes on; some dance-tapes also include a repeat performance which starts at three-halfs speed and picks up from there, which has come to be nicknamed the Suicide Branle.

The melody (with acceleration) can also be used to dance the Calafian Branle which is the one with the twirling back and forth that makes some people very dizzy.

Like the Candlestick Branle, this branle is done by couples holding hands with each other, and is not known to have any specific formation in which the couples are arranged. The couples hold both hands; the simplest way is to take near hands facing one's partner, but it is not known if this is correct.
Variations
This dance has been adapted by modern people into a mixer, in which the couples are in one of various larger formations and the final turn takes each dancer away from his or her partner. These modern versions may best be learned in person from those who do them.

Other versions of this step have been proposed. In one version, there is a full hop between each step and the next, but this is not supported by Arbeau's own definition of saut, which emphasizes elevation (at the middle of the saut) rather than rising from the ground or landing. In another version, one lands on both feet for each step, but this is not consistent with the original French, in which every step except the final pieds joints is done by a foot in the singular.
As with all branles, this dance is performed in a line of people holding hands or, if enough people are present, a circle. It is not necessary for the dancers to be paired into partners.

The two strains of music alternate until such time as the musicians decide to stop.

Note that during the second strain the single right is followed by a left foot kick, and the single left by a right foot kick, which works the opposite way from the kick after the double in the first strain. This requires a subtle difference in the transfer of weight between feet: instead of closing with one foot at the end of a double and then springing onto the same foot to kick with the other, you close with one foot at the end of a single and then spring onto the other foot, to kick with the foot that closed.

The branle Gay is found in Orchesography by Thoinot Arbeau. It is one of the quatre branles.

N. B. This is one dance where the pied en l'air is used in a way that does not necessarily imply a forward kick, so it might have used a pied en l'air that does not go forward and is thus not really a kick.

Choreography
As with all branles, this dance is performed in a line of people holding hands or, if enough people are present, a circle. It is not necessary for the dancers to be paired into couples.

This is the fourth easiest dance in the world. It requires a little balance and absolutely no brain power.
* Double left (DL)
* Single right (SR)

Choreography
As with all branles, this dance is performed in a line of people holding hands or, if enough people are present, a circle. It is not necessary for the dancers to be paired into partners.

This is the second easiest dance in the world.

Verse
DL SR
Repeat

Variations
In place of the single right, one may do three quick kicks: pied en l'air gauche, pied en l'air droit, pied en l'air gauche. This is a division or decoupement. Presumably other divisions would also have been done, as in the Double Branle
